Vegan Homemade Thai Red Curry Paste Recipe

Vegan Homemade Thai Red Curry Paste Recipe:

Prep Time: Under 10 minutes

Ingredients:

Ginger/galangal: 1 small stick
Peppercorns: 2 tsp
Garlic cloves: 5-6
Red chilies soaked for 10 minutes: 5-7 depending on how much heat you like.
Lemongrass: a finger-sized piece is good enough. It has a strong smell and flavor, so if you are not used to this just like me, you can either put very little or skip this altogether.
Grated onion: half
Green coriander leaves: 1/3 cup
Coconut milk: 3-4 tbsp
Chilli garlic sauce: 2 tbsp
Coriander powder: 2 tsp
Cumin powder: 1 tsp
Lemon juice: 2 tsp
Salt: 1 tsp
Lemon zest or lime leaves
Thai basil: 5-6 leaves
Blitz them to a fine paste. Store them in the fridge and they will last a week easily.
