Veggies Stir-Fry in Pad Thai Sauce


Cooking time: 15mins



For Veg Stir Fry:

Veggies of your choice.

Onion: 1 Sliced, not very thin

Green onions: 3-4 cut into bigger sizes

Yellow bell pepper: 1 thinly sliced

Green Capcicum: 1 thinly sliced

Garlic: 3-4 pods

Baby corn: 5-6 whole or cut half

Bokchoy: 2 Optional

Pineapple: A few chunks

Tofu : Chunks



For the Sauce:

Tamarind paste: 3-4 tsp

Palm Sugar/coconut sugar : 2 tsp

Soy sauce: Dark Soy (Preferably) 2-3 tbsp

Sugar: 1tsp ( Vegans can use maple syrup)


Make the Sauce:

In a pan, pour the tamarind paste, the palm sugar, soy, the white sugar, a bit of water. Mix them all together, let them cook for a minute, when you see the sauce bubbling take them off the heat.


Make the Stir Fry:


In a pan take some veg oil, throw in some chopped garlic, the veggies. Mix them all well, cook on high flame. After 2-3 minutes add the sauce, salt, mix them well. let this cook for 2-3 minutes. Remove from heat the dish is done.
