Vegan Gazpacho Cold Soup with Grapes and Cucumber

Gazpacho is a cold soup made of raw vegetables and is served cold. This soup originated in Spain and  can be easily customized, for example i added green grapes to my recipe.

Tonight i might try making the watermelon Gazpacho by replacing grapes with watermelon.

 

Serves:3-4

Cucumbers: 4: peeled, seeded and chopped

Green Grapes: 1 1/2 cups

Green onion: 1 tbsp chopped (optional)

Garlic Cloves: 1- 2

Extra Virgin Olive Oil: 3-4 tsp

White Wine Vinegar: 2 teaspoons OR  lemon juice: 1 tsp

Water: half-1 cup

Salt: As per your taste

Green onions for garnish: 1

 

Preparation:

In a blender, combine the cucumbers, grapes, garlic, olive oil, vinegar and water; puree until smooth. Season with salt. Leave it in the refrigerator to chill. Serve chilled.

Tips: You can also garnish with sautéed mushrooms, green onion or feta cheese.
