Quinoa Avocado Salad with Lemon and Pomegranate Dressing

Ingredients:

Serve: 1-2

Salad:

Avocado: 1 ( diced)

Pomegranate: one cup (half cup for the salad, half for dressing)

Lemon: Juice of 1 big lemon or 2 small.

Cucumber: 1 diced

Mint leaves: according to your liking

Cherry Tomatoes: 8-10

 

Dressing:

Lime Juice: 1 tbsp

Pomegranate juice: Squeeze half cup pomegranate and extract juice

Sesame seeds: 1 tbsp

Salt: according to taste

 

Combine the Quinoa and the veggies and the fruits, whisk the dressing separately, now combine them all together and serve.

Tip: You can add more seeds( Flax, sunflower etc or dry fruits to this salad too.)
