Healthy Chocolate Cookies Recipe

Flourless glutenfree chocolate cookies made with walnuts. I took this recipe from @food52, they call it #francoispayard’s walnut cookies. I decided to gives this perfect recipe my own humble twist and added almonds and some leftover breakfast muesli without measuring them properly…shhhhhh…. but I have to admit they turned out very tasty, also I think I am getting more and more comfortable with baking. What used to be my biggest fear comes almost naturally to me now. #proudmoment. This is an all dunk in a food processor kinda recipe so if you are a lazy cook like me then you can try baking these.

Baking time: 15 mins

Total: 25 mins

Makes: 13-14 cookies

What Ingredients Do You Need to Make Chocolate Cookies:

  • Walnuts  chopped: 1. 5 cup
  • Almonds chopped: 1 cup
  • Icing sugar- 1 1/4  cup
  • Cocoa Powder ( I used Hershey’s): 1/2 cup plus 3 tablespoons
  • Salt: a pinch
  • Egg whites: 3 (of big eggs) or 4 (small)  (room temperature)
  • Vanilla extract: 2 tsp

Method:

  1. Chop the walnuts (coarsely) in a food processor or a mixer grinder (i prefer the food processor).
  2. Chop the almonds (coarsely)
  3. In a big bowl or a stand mixer or a food processor, add the chopped nuts, the icing sugar, vanilla, salt and mix well.
  4. Now add the egg whites and mix them all very well.
  5. In a baking tray, on a butter paper sheet, take 1 scoop of this cookie batter and make a roundish shape and place on the baking tray. Repeat. The dough will be sticky so don’t worry about it. You will end up making 13-15 medium-sized cookies.
  6. Bake then at 177C or 350F for 14-15 mins.
  7. Your cookies are ready. Let them cool down and enjoy a cup of coffee.
