Gluten Free Flourless Peanut Butter Ginger Cake

Gluten-Free Flourless Peanut Butter Ginger Cake: Yes, you heard me. It is indeed flourless and gluten-free and did I say super simple. So no more excuses, just start baking.

Before we go to the recipe let’s read some benefits of this butter. Peanut butter is both nutritious and delicious. People who consume peanuts and peanut products on a regular basis have an overall higher intake of protein, fats (polyunsaturated and monounsaturated), fiber, vitamins A and E, folate, calcium, magnesium, zinc, iron, potassium, and many other nutrients. Peanuts contain no saturated fats and can be consumed on a regular basis. They only contain unsaturated fats. This is good news for people who fear to gain weight by consuming peanuts. Peanuts actually help you to lose weight!

Ingredients For Peanut Butter Ginger Cake Recipe:

  • Banana (Ripe): 1 mashed
  • Egg:1
  • Grated ginger: 1 tbsp
  • Good quality peanut butter (Most peanut butter brands are GF but do check the pack before buying): ½ cup
  • Vanilla essence: a few drops
  • Salt: a pinch
  • Honey: 2-heaped tablespoons
  • Baking soda: ¼ tsp
  • Chocolate chips (optional): to add on top of the cake

Method:

  1. Preheat the oven to 200C. Use butter or oil to line the baking dish(6 inches diameter) or line the muffin cups if the baking dish is not available.
  2. Using a blender (I used a hand blender), mix everything together very well. make sure all the ingredients have blended in very well.
  3. Now spread the batter on the baking dish or the batter in the muffin cups (do not fill it to the brim).
  4. Sprinkle some chocolate chips if you want.
  5. Bake the cake or the muffins at 180C for 15 minutes. The cake takes more than 15 minutes to cook. The muffins take almost 15 minutes. But this also depends on the kind of oven you have. So after 12 – 13 minutes in the oven, I recommend you start checking the cake/muffins. Insert a toothpick in the center; if it comes out clean then the cake is done.
  6. When I baked, the cake took almost 20 minutes to bake.
  7. After the cake is baked, allow them to cool in the tray/muffins cups for 10-15 minutes.
  8. Serve after they have cooled down properly.
