Gazpacho is a cold soup made of raw vegetables and is served cold. This soup originates from Spain and this can be customized in many ways to accommodate your taste. I like to use the seasonal veg and fruits to make this, today i am using cucumber, grapes, mint and lemon. This Gluten Free Gazpacho Soup recipe is just as delicious, creamy, and fresh as the original recipe. Its so good you won’t even miss the bread ( the traditional gazpacho recipe has bread).
Cucumbers: 4: peeled, seeded and chopped
Green Grapes: 1 1/2 cups
Garlic Cloves:1- 2
Extra Virgin Olive Oil: 3-4 tsp
White Wine Vinegar:2 teaspoons OR lemon juice: 1 tsp
Water: half-1 cup
Salt: As per your taste
In a blender, combine the cucumbers, grapes, garlic, olive oil, vinegar and water; puree until smooth. Season with salt. Leave it in the refrigerator to chill. Serve chilled.
Tips: You can also garnish with shrimp, sauteed mushrooms or feta cheese.
